Easy frittata recipe

Want to add more veggies into your diet without the hassle? Try my easy frittata recipe, which can be adapted for any veggies you wish. It is the perfect gluten-free (and dairy-free and vegetarian if you choose) lunch or snack which can be enjoyed warm or cold. As Alice from The Whole Daily would say, this is the perfect way to “crowd-in” more of the good stuff into your diet!

Easy frittata recipe
Recipe Type: Lunch or snack

Serves: 10 slices
Use this easy frittata recipe to crowd in more veggies into your diet. It can be adapted to any veggies and protein that you wish!
Ingredients
  • 10 eggs
  • 1/3 cup almond milk
  • Frozen spinach – thawed and water removed
  • Brown onion – diced
  • Sweet potato – diced
  • Carrot – diced or shredded
  • Red capsicum – diced
  • Zucchini – diced
  • Cherry tomatoes – halved
  • Ham – diced (optional – remove for vegetarian)
  • Salt & pepper to taste
  • Ricotta – to spread on top (optional – remove for dairy free)
  • Tsp coconut oil for frying
Instructions
  1. Preheat the oven to 180 degrees celsius.
  2. Line a baking dish with grease proof paper. I like to scrunch the paper into a ball under running tap water, wring it out and spread it over the dish so that it moulds to the dish.
  3. Brown the onion and ham in a frypan with a little coconut oil.
  4. Add the diced veggies (excluding the spinach) to the frypan and cook until soft.
  5. Break up the spinach into chunks and spread over the lined baking dish.
  6. Place the veggies into the lined baking dish.
  7. Whisk the eggs and almond together along with the salt and pepper. Add the mixture to the baking dish, being sure that the mixture covers the veggies. Add more eggs and almond milk if needed.
  8. Sprinkle ricotta over the top if desired.
  9. Bake in the oven for 40-45minutes.
  10. Allow to cool. Remove from the baking dish and cut into slices. Keeps in the fridge for a few days.
